It was T's birthday this week. I love celebrating birthday's, especially the most important person in the world to me. Anyway, it wasn't anything too special, but it was nice. I love his smile in the first picture.
He said he wanted a lemony pie, so I ixnayed on the raisin pie this week, and did a lemon sour cream one for him. I did the Crisco crust again, but I had a lot of trouble with it. I don't think I added enough water this time, because when I went to roll it out it totally separated. When I went to lift it to put it in the pan, it fell to pieces in my hands and would not stay together. So I ended up making a new crust, to which I added more water, and it rolled out the best yet. I think I am getting the hang of it, and may not have been adding enough water all along!
Anyway, again I used an allrecipe.com recipe, found here. I highly recommend it. I used homo milk and the pudding set up really nicely. I added extra lemon zest according to the reviews I read. And topped with real whipped cream of course.

Those husbands of ours ... They both love lemon too?!?!
ReplyDeleteI found this a key to my pie making - adding more water. I find most recipes are so worried about not having a flaky crust that the pastry is too dry to effectively work with. I dreaded making pie crust until I discovered adding a little more water.
So far, no one has complained about the crust not being flaky enough.
